150 g pork liempo, cut into strips (3/4 cup)
1/4 cup strained bagoong isda
1 1/2 cups rice washing
1 can (150 g) tomato sauce
1 medium onion, sliced
1/2 tbsp ginger strips
2 squares tofu (tokwa), fried and cut into cubes
3/4 cup squash chunks
6 pcs okra, sliced
4 medium eggplants, sliced
1 large ampalaya, seeds removed and sliced
1 small bunch sitaw, cut into small pieces
Directions:
1. Saute pork until light brown.
2. Add bagoong isda, rice washing, tomato sauce, onions and ginger. Bring into boil.
3. Simmer for a few minutes. Add the rest of the ingredients. Cover and simmer for 15 minutes, or until cooked.
Makes 8 servings.
Tofu replaces part of pork.
