Italian Rice

Ingredients:
400 g chicken breast, deboned and cubed
1 tbsp crushed garlic
1 onion, chopped
1 can (385 g) spaghetti sauce
1/2 cup chicken broth
1 laurel leaf
1 carrot, sliced
1 red bell pepper, cubed
1/2 cup cooked green peas
salt, pepper and sugar
5 cups cooked rice

Marinade:
soy sauce and calamansi (phil lemon) juice


Directions:
1. Marinate chicken for 30 minutes.
2. Saute garlic, onion and chicken.
3. Add spaghetti sauce, chicken broth, laurel leaf, carrot, bell pepper and green peas. Season.
4. Simmer. Add rice. Stir until well-blended. Serve hot.

Makes 6 servings.
