Hotdog Menudo
,Ingredients:
5 pcs (160 g) regular hotdog, cut into cubes
2 small potatoes, cut into cubes
1 medium carrot, cut into cubes
1/4 cup cooked or frozen green peas
1 small green bell pepper, cut into strips
1 pouch (200 g) classic menudo-estofado and afritada recipe sauce
Directions:
1. Simmer hotdog, potatoes and carrots in 1/2 cup water with 1/2 tsp iodized salt (or 1 1/2 tsp rock salt) for 5 minutes.
2. Add classic recipe sauce. Simmer for 10 minutes. Add bell pepper and peas. Simmer once.
Makes 5 servings.
Excellent source of Vitamin A - for good eyesight.
