Embutido

Ingredients:
400 g ground pork
1 1/2 cups semi-ripe "saba" banana, boiled and grated
2 eggs, lightly beaten
2 pcs regular-sized hotdog, minced
1 onion, chopped
1 red bell pepper, chopped
1/4 cup sweet pickle relish
1/2 cup tomato sauce
1 cup stale bread
salt, pepper and soy sauce
1 stalk celery, chopped
2 tbsp powdered milk (optional)


Directions:
1. Combine all ingredients in a bowl. Mix thoroughly.
2. Roll 1 1/2 cups of mixture in aluminum foil or colorless cellophane.
3. Steam for one hour. Cool. Chill overnight.
4. Slice diagonally. Serve with banana ketchup.

Makes 8 servings.
Bread and banana replace part of the pork.
