Barbecue Kitchenomica
Ingredients:
1 kg chicken (thigh or legs)
3/4 cup sweet spicy ketchup
1 tsp grated ginger
1 head garlic, crushed
1/4 tsp pepper
1/4 cup soy sauce
1 tbsp calamansi juice
3 tbsp brown sugar
Directions:
1. Cut shallow slits on each chicken piece then season with 1/2 tsp iodized salt (or 1/2 tbsp rock salt). Add remaining ingredients except ketchup. Mix well. Add sweet spicy ketchup. Marinate for at least 1 hour (or preferably overnight).
2. Grill (charcoal or pan) chicken until cooked.
Makes 8 servings.
Use low heat when grilling chicken on pan.
Excellent source of Iodine - helps prevent goiter.
