Spicy Pineapple Chicken

Ingredients:
800 g chicken, cut-up
2 tbsp cornstarch
1/2 cup margarine
1 tsp crushed garlic
1/2 cup onion rings
1 green bell pepper, cut into strips
1/2 cup raisins
1 can (234 g) pineapple chunks
grated rind of 1 dayap or calamansi (phil lemon)
1/4 cup water
salt and pepper

Marinade:
1 tbsp calamansi juice
salt and pepper


Directions:
1. Marinate chicken for 30 minutes. Sprinkle with cornstarch.
2. Brown in margarine. Add garlic and onions. Stir.
3. Add bell peppers, raisins, pineapple chunks with syrup, grated rind and water.
4. Season. Simmer until tender. Serve hot.

Makes 8 servings.
