Hawaiian Chicken Salad

Ingredients:
2 pcs medium red apples
1 can (439 g) fresh cut pineapple chunks, drained (reserve syrup)
1/4 kg chicken breast, boiled and meat cut into cubes
4 stalks celery, diced
2 tbsp raisins
3/4 cup mayonnaise


Directions:
1. Cut apples into chunks and soak in pineapple syrup for 5 minutes. Drain.
2. Combine with the rest of the ingredients. Season with 3/4 tsp iodized fine salt and 1 tbsp sugar. Blend well. Chill before serving.

Makes 6 servings.
It is rich in Niacin - promotes normal digestion and healthy skin.
Don't throw away the canned syrup from the pineapple chunks. Use it to add flavor by adding it to the liquid used for simmering the chicken meat.
