Fish Afritada
Ingredients:
1 tbsp calamansi juice
350 g fresh tuna, deboned and cut into chunks (12 pcs)
1/3 cup all-purpose flour
4 cloves garlic, crushed
1 medium onion, sliced
1 pork bouillon cube
2 medium potatoes, cut into 6 chunks
1 medium (150 g) carrot, cut into 6 chunks
1 laurel leaf
1 can (227 g) tomato sauce
14 pcs (100 g) baguio beans, sliced diagonally
1/2 cup cooked green peas
1 medium red bell pepper, cut into strips
Directions:
1. Sprinkle fish with calamansi juice, 1/3 tsp iodized salt (or 1 tsp rock salt) and 1/4 tsp pepper. Dredge in flour and fry until golden brown. Set aside.
2. Saute garlic, onion, bouillon cube, potatoes and carrots for 3 minutes. Add 1 1/2 cups water, 1/2 tsp iodized salt (or 1 1/2 tsp rock salt), 1/4 tsp pepper, laurel leaf and tomato sauce. Simmer for 10 minutes.
3. Add remaining ingredients and fish. Cook for another 5 minutes.
Makes 6 servings.
Excellent source of Iron.
Fish replaces meat. Vegetables serve as extenders.
