Carne Cocido

Ingredients:
1/4 kg pork liempo, cut into serving portions
3 pcs chicken wing, halved
1/4 cup oil
1 garlic, crushed
1 onion, sliced
1 pc chorizo de bilbao, sliced
1/2 cup cooked garbanzos
1 1/2- 2 cups beef stock
300 g beef, cut into serving portioins and cooked till tender
1 carrot, sliced
1 cup quartered and fried camote (sweet potato)
1/2 tsp peppercorn

1 can (227 g) tomato sauce
brown sugar and salt
100 g baguio beans, sliced
1/4 kg cabbage, quartered

Marinade:
soy sauce and black pepper


Directions:
1. Marinate pork and chicken for one hour. Fry until golden brown. Set aside.
2. Saute garlic, onions and chorizo de bilbao.
3. Add pork, garbanzos and beef stock. Simmer until meat is just tender.
4. Add beef, chicken wings, carrots, camote, peppercorns and tomato sauce. Season.
5. Add baguio beans and cabbage. Continue simmering until cooked. Serve hot.

Makes 10 servings.
