Fresh Fruit Lumpia


Ingredients:
2 tbsp butter, softened
1 egg yolk
1/2 cup sugar
1/4 tsp vanilla
1 large ripe mango, diced
2 pcs kiwi, diced
1 cup strawberries or cherries, diced
1 pack lumpia wrappers
oil for frying


Directions:
1. In a bowl, combine the butter, egg yolk, sugar and vanilla. Mix until the sugar is dissolved.
2. Add the diced fruits and blend well.
3. On each lumpia wrapper put about 1-2 tbsp of the fruit mixture. Roll up to enclose and seal the edges with some water. Chill the lumpia for a few minutes.
4. Heat the oil in a pan then fry the lumpia until crisp and golden brown. Drain on paper towels before serving.

The filling can be quite moist so I suggest that you use two layers of wrapper for each lumpia.
Preparation time: 30 minutes
Cooking time: 15-20 minutes
Makes 4-6 servings.
